Citrus Roasted Golden Beets make an amazing summer side dish or can be sliced to top a salad. Either way, this was a great inspirational find at our local farmer’s market. As I always do, I searched for ideas to use them and I settled on this orange-thyme combination since I had both readily available. Now, before you totally skip this post because of your past experiences with red beets, read on. Golden beets are a bit sweeter (kind of like carrots), less earthy and rather mellow in its taste. These are roasted with olive oil, salt, pepper,and fresh thyme sprigs while sitting on a bed of orange slices.
Wash, peel and slice beets. Be aware they can stain like the red beets, so prepare them on a surface which can protect your counters
On a large sheet of parchment paper, place 4 orange slices lengthwise. Arrange the beets on top, then drizzle with olive oil, Sprinkle the salt and pepper and center the 2 remaining slices over the beets. Place thyme sprigs across this colorful arrangement. Fold the top and bottom portions of the parchment paper over the beets, Tuck the sides under. These flavors will permeate the beets as they are roasting in the oven.
At the end of the 35-40 minutes roasting time, remove from the oven and allow them to remain in the closed parchment paper for an additional 5 minutes. Carefully open the packet so the steam slowly escapes and doesn’t burn you. Enjoy the sweet citrusy herbal aroma as it lifts in the air.
To be honest, I couldn’t wait to start nibbling on the slices while they were warm. Each bite of these Citrus Roated Golden Beets was a combination of a sweet-savory pleasure. You may eat them as they are, eat them cold or slice them to use as a topping on a salad with maybe some Honey Balsamic Vinaigrette,
Citrus Roasted Golden Beets
Ingredients
- 8 golden beets, peeled and sliced
- 3 T extra virgin olive oil
- 1/2 t sea salt
- 1/2 freshly ground black pepper
- thyme sprigs
- 6 orange slices
Instructions
- Peel and slice beets.
- Place 4 orange slices in the middle of a large sheet of parchment paper lining a rimmed baking sheet. Arrange the sliced beets on top of the oranges.
- Drizzle with olive oil; grind black pepper and sprinkle sea salt over the top. Place the 2 remaining orange slices on top followed by the sprigs of thyme.
- Fold both sides of parchment paper over the beets then tuck the ends under.
- Bake in a 375 degree oven for 35-40 minutes.
- Serve as a side or slice in strips to place on a salad.
