Taco Tuesday’s are met with anticipation! We know it’s not a meal the kids will dispute; it’s quite the contrary. In spite of our desire to try new adventurous meals that have intriguing flavors, we will bend to creating a meal for them, with a little twist for us. To satisfy our desire for a flavor enhancer, we make this Creamy Chipotle Pepper Dressing. Even if they choose not to spread this love on their tacos, that just means there will be more for us to use on a rice bowl with grilled chicken or shrimp. Yum! I can use this for other meal creations and devour every bite with pleasure!. This is versatility at its best!
Without elaborating, all that needs to be done to create this would be one bowl. Why go on and on in a post when you need this NOW! Just drop all of the ingredients in it and stir! If you can make this ahead of time, it would allow the flavors to meld. Otherwise, if you are short on time, you can make this while the taco meat (we always use ground turkey) is cooking on the stove.

Serves: 1 cup
- ½ c. mayonnaise
- ½ c. light sour cream or plain Greek yogurt
- ¼ t. cumin
- ¼ t. chipotle chile pepper
- ¼ t. smoked paprika
- 2 cloves of garlic, peeled sliced then diced
- 1 T. fresh lime juice
- ½ t. Kosher salt
- ¼ c. chopped cilantro
- Whisk all ingredients together and refrigerate until ready to use.
