Summer is winding down, in literally 10 days, and fresh local peaches are still available. Last Sunday I was imagining a quick breakfast which included the bowl of peaches sitting on my kitchen counter. The warmth of the infusion of summer and fall flavors in this Creamy Peach Pecan Oatmeal will mellow your mood to start the day and energize your every step. At least, that’s the effect it had on me. 🙂
Melt the butter and stir in the oatmeal. Toast it in the toaster oven, stirring halfway or in a small skillet over low heat. When done, it should have a slight nutty aroma.
Look at those beauties! They are so sweet and juicy! It’s ok to take a bite or two. Leave the skin on for extra nutritional value, or peel if you prefer.
Here, I add the milk, spices and nuts along with the amount of desired sweetness(sugar). You don’t want to overpower the peaches.
Stir to combine.
Microwave on high for 3 minutes. Stir and microwave an additional 3 minutes.

- 1 T. butter, melted
- 1 c. old-fashioned oats
- 1½ c. milk
- ¼ c.chopped pecans or pecan chips
- 1 c. chopped peaches
- ½ t. vanilla
- ⅛ t. cloves
- ⅛ t. nutmeg
- ⅛ t. allspice
- ⅛ t. cinnamon
- ⅛ t. ginger
- 2 T. brown sugar (Add more for your preferred taste, if desired.)
- Melt butter in microwave safe dish.
- Stir in the oatmeal.
- Toast in a toaster oven or on the stove in a small skillet until it acquires a toasty nutty aroma.Stir frequently.
- Dice sliced peaches.
- Add milk and other ingredients to the dish.
- MIcrowave for 3 minutes. Stir.
- Microwave an additional 3 minutes. It should appear thicker at this point.
- Cool slightly and serve.
