Don’t ask me why in the middle of winter I’m craving some Deviled Eggs, but perhaps it’s a mindset of warmer days in order to persist through the bitter ones currently being experienced. Now, if we could just grill some burgers to go with them. Actually, I came across an article from Simply Recipes titled How to Steam Hard Boiled Eggs. Since peeling to perfection is sometimes a challenge, I thought let’s just see if this method works. It states that the air from the steam makes the eggs easy to peel when it permeates the shell. I was not disappointed with the results. I’m pretty sure this has convinced me to make this my go to method for hard boiled eggs.
I put 6 in a the saucepan lined with steam basket and 1″ of boiling water. A lid placed on top, heat reduced to medium and timer set for 15 minutes, resulted in eggs which could be easily peeled. Here’s proof. After the timer beeps, I ran cold water over them in the saucepan until they were comfortable enough to handle. Gently roll the center of the cooked egg on the counter. This should crack the shell just enough for you to be able to start to peel it off. BOOM! Look at this perfection! I look like a pro!
Now that I have these perfect eggs, let’s pursue making some Deviled Eggs. They look perfectly cooked on the inside,
Pop out the egg yolks from behind and mash with a fork.
Combine the egg yolks with the remaining ingredients. If you want it a little creamier, add a little more mayo until your favored consistency is reached. This recipe creates a more firm consistency which holds its form well when one picks it up to eat. You don’t want it to accidently spurt out on your favorite shirt as you pop it into your mouth.
I placed the filling mixture in a sandwich-sized Ziploc bag and snipped off a little corner. Now, I have other devices capable of doing this task a little more “beautifully”, but it was only 6 eggs. Just swirl it into the eggs.
To top it off, just add a sprinkle of Smoked Paprika, one of my favorite spices. It really compliments these Deviled Eggs well. Maybe some Picnic Potato Salad and burgers are on the menu. Hurry up, summer!
Deviled Eggs
Ingredients
- 6 large eggs
- 2 T mayonnaise
- 2 t yellow mustard
- 2 t sweet pickle relish
- pinch salt
- pinch freshly ground black pepper
Instructions
- In a saucepan, bring 1" of water to a boil on HIGH. Add the steamer basket and place in the 6 eggs..
- Cover and reduce heat to medium. Set timer for 15 minutes.
- Remove from heat and run cold water over eggs until they are comfortable to handle.
- Roll eggs gently on the counter surface to crack center of shells. Peel and rinse off.
- Slice eggs in half and remove cooked egg yolks. Crumble them with a fork and place in a small bowl.
- Add in the remaining ingredients and blend well.
- In a sandwich size ziploc bag, place the filling mixture. Clip off a small corner of the bag and squeeze filling equally into the cooked eggs.
- Sprinkle with Smoky Paprika, if desired.
- Cover and chill.
