Walnut Sugar Cookies

- 2-1/4 c. flour
- 1 t. baking powder
- ½ t. baking soda
- ½ c. butter(1 stick), room temperature
- ½ c. Crisco or coconut oil, solid form
- ⅔ c. sugar
- ½ c. light brown sugar
- 1 egg plus 1 egg YOLK
- 2 t. vanilla
- ⅔ c. finely chopped walnuts plus more
- for rolling, if desired
- Sift together the dry ingredients.
- Beat Crisco, butter and sugars until fluffy.
- Add in egg and vanilla; mix well.
- Blend in the dry ingredients, about ½ cup at a time
- Stir in the finely chopped walnuts.
- Preheat oven to 350 degrees.
- Using a cookie scoop(1.5T), place cookies 2" apart on parchment paper.
- You may roll them in colored sugar, or more finely chopped walnuts.
- Bake for about 14 minutes. Cool for about 5 minutes.
