90 Minute Dinner Rolls

Ingredients
  • 2-2½ c. unsifted flour
  • 2 T. sugar
  • ½ t. salt
  • 1 pkg. active dry yeast
  • ½ c. milk
  • ¼ c. water
  • 2 T. butter
Instructions
  1. Mix ¾ c. flour, sugar, salt and undissolved yeast.
  2. Heat milk, water and butter to 120 degrees.
  3. Gradually add wet ingredients to dry ingredients and beat for 2 minutes, using the dough hook, at medium speed. Scrap down sides half way through the time.
  4. Add additional ½ cup of flour and beat at medium speed for 2 more minutes.
  5. Repeat with another ½ cup of flour and beat on a medium high speed for another 2 minutes.
  6. Stir in enough flour, about another ¼ cup, to achieve a soft dough which cleanly releases from the side of the bowl.
  7. Knead for 2-3 minutes on a floured board.
  8. Divide dough into 12 equal parts.
  9. Place shaped balls into an 8" or 9" prepared pan.If making a double batch, you could use a 13" x 9" x 2" pan and place rolls in a 6 x 4 array.
  10. Microwave a large measuring cup of water for about 3-4 minutes.
  11. Place pan of rols in microwave for about 30 minutes until touchng with small gaps between them.
  12. Bake in 375 degree oven for 20 minutes.
  13. Remove from pan and serve warm.
