Apple Pie Pancakes

Here's a wonderful version of pancakes to enjoy this fall while apples are plentiful!

Ingredients
  • 1¼ c. all purpose flour
  • ¼ c. turbinado sugar(Sugar in the Raw)/ or granulated sugar
  • 2 t. baking powder
  • 1 t. baking soda
  • ½ t. cinnamon
  • ¼ t. nutmeg
  • 1¼ c. buttermilk
  • 2 large eggs
  • ¼ c. melted butter( ½ stick)
  • 2 apples sliced horizontally, center cored out
Instructions
  1. Whisk together the dry ingredients.
  2. Whisk together buttermilk and eggs
  3. Make a well in the center of the dry ingredients and whisk in the buttermilk and egg mixture.
  4. Blend in the melted butter and allow batter to rest for about 10 minutes.
  5. Wash and slice apples about ¼" thick. Using a small cutter, core out the center. If you don't have those cute small cutters, use an apple correr first, then slice. I leave the peel on the apple.
  6. Preheat griddle to 325-350 degrees, Wipe s thin layer of oil onto the griddle with a folded paper towel just before scooping the batter out to cook.
  7. Using a large scoop, place batter on griddle. Press an apple slice onto the batter and press down lightly.
  8. Turn once batter begins to bubble.
  9. Continue to cook until underside is golden. If center(cored part) puffs up too much while cooking, press it down gently.
