Garlic Thyme Smashed Cauliflower

Ingredients
  • 1 large head of cauliflower
  • 3 cloves of garlic, sliced
  • sprigs of thyme
  • 2 T. butter/EVOO
  • Kosher salt
  • pepper, freshly ground
Instructions
  1. Separate cauliflower into florets.
  2. Chop into smaller pieces.
  3. In a medium pot, cover chopped cauliflower with cold water.
  4. Bring to a boil and reduce heat.
  5. Cook for about 10 minutes. Fork-test to make sure it's soft enough to mash.
  6. Drain. Strip leaves from the sprigs of thyme.
  7. Add butter and stripped thyme leaves. Place in a food processor or use an immersion blender to create your desired consistency.
  8. Season to your liking with salt and pepper.
