Garlic Thyme Smashed Cauliflower

Serves: 6 servings
- 1 large head of cauliflower
- 3 cloves of garlic, sliced
- sprigs of thyme
- 2 T. butter/EVOO
- Kosher salt
- pepper, freshly ground
- Separate cauliflower into florets.
- Chop into smaller pieces.
- In a medium pot, cover chopped cauliflower with cold water.
- Bring to a boil and reduce heat.
- Cook for about 10 minutes. Fork-test to make sure it's soft enough to mash.
- Drain. Strip leaves from the sprigs of thyme.
- Add butter and stripped thyme leaves. Place in a food processor or use an immersion blender to create your desired consistency.
- Season to your liking with salt and pepper.
