Fire Roasted Salsa

Ingredients
  • 10 oz grape tomatoes
  • 1 small red onion, peeled and quartered
  • 2 garlic cloves
  • 1 jalapeno
  • 2 T. extra virgin olive oil
  • 1 t. Kosher salt
  • ¼ t. smoked paprika(optional)
  • 2 T. fresh lime juice
  • ¼ c. chopped cilantro
Instructions
  1. Preheat oven to 450 degrees.
  2. On a foil-lined rimmed baking sheet, place the tomatoes, quartered onion, garlic and jalapenos on a rack in the top ⅓ of the oven.
  3. Drizzle with olive oil and toss to make sure all vegetables are coated.
  4. Roast for about 30 minutes, rotating pan and flipping vegetables frequently.
  5. Once blistered and browned, remove from the oven to cool.
  6. Place vegetables in blender/food processor and pulse to coarsely chop.
  7. Add in lime juice, salt, smoked paprika and cilantro. Pulse again.
  8. Serve immediately or chill in the refrigerator and allow flavors to meld.
