To make your own Fresh Egg Pasta is a fun pastime to help make good family memories in these trying times. It’s a little work, but it is fulfilling to the first bite using whatever sauce your desire. Today, I’ll show you my method for creating a pasta dough which can be used with your KItchenAid Pasta attachment or a pasta roller. I’ve used this recipe for both with satisfying results.
The Mix:
Aerate the flour with a few spins of the beater. Add the beaten eggs in a well in the center. As it spins around, the eggs will gradually incorporate the flour along the edges
As you continue to mix, the dough will begin to come together. I began to incorporate about 1/2 teaspoon of water at a time until dough begins to become more cohesive.
Grab a clump of dough from the bowl and see if you can press it into a ball. If so, you should be done with this part. You should beable to roll the dough into a ball in the bowl. The dough hook may come in handy at this point or you could form it by hand, which I did in this example by pressing it againts the sides and rolling it around the inside of the mixing bowl.
Before wrapping to rest for a while, knead briefly to make dough more smooth, about 1-2 minutes. A minimum resting time of at least 15 minutes is important for gluten formation. I usually form it into a disk at this point and wrap it for a brief stay in the fridge.
Making the Pasta:
As a Christmas gift, I received a KitchenAid Gourmet Pasta Press. I had bought one for my son and told my husband about it. Perhaps I raved too much about it, because lo and behold, there was one for me under the Christmas tree! Below, I made some large macaroni, which seemed almost like ziti. I have plans for it to be used in TikTok’s Baked Feta Pasta.(see below).
I placed the “large macaroni” on wire racks to dry out a bit before placing them in the fridge in a Ziploc bag to use later. It actually made about a rack and a half or so. By weight, this recipe makes about a pound.
To Cook:
The pasta is placed in a gallon of salted water and cooked for only 3-5 minutes. The shape of the pasta determines the length of time it needs to cook. Generally,fresh pasta cooks in significantly less time tan boxed pasta.
Now, let me tell you, whether you have the means by which to make fresh pasta or not, this dish is to die for …figuratively, of course. Even s a leftover, it’s amazing! The fresh pasta is an extra plus! If you like Fettucini Alfredo (see lpic below), you should try it with fresh pasta ! It’s incredible!
