Who needs to wait for BBQ weather to have these Grilled BBQ Chicken Thighs ? Create them indoors until the weather cooperates and don’t forget the much acclaimed White BBQ Sauce, a perfect combination if there ever was one! These two recipes were discovered years ago on a Southern Living recipe site and it’s been a favorite ever since! With maybe a little tweak here and there, the credit is theirs!
Simplicity is the basis for this flavorful rub which soaks into the chicken for about 4 hours in the refrigerator. Quickly combine the spices together with a whisk.
Dump it into a Ziploc bag containing the chicken thighs, then seal. Shake the bag to distribute the rub. Take time to massage the rub into the chicken. Refrigerate for 4 hours, massage rub into chicken every hour until ready to cook.
Bake at 350 degrees in the oven for about 20 minutes on a non-stick foil-lined sheet pan. Check the temperature and adjust time if it has not reached 180 degrees. If grilling , turn after 10 minutes and cook an additional 10 until internal temperature is 180 degrees.

Serves: 8-10 servings
- 1 T. thyme
- 1 T. oregano
- 1 T. cumin
- 1 T. Smoked Paprika
- 1 t. onion powder
- ½ t. salt
- ½ t. black pepper
- 8-10 boneless chicken thighs
- Whisk ingredients together.
- Place chicken thighs in a large Ziploc bag.
- Pour spice blend over chicken, seal bag. Shake then massage rub into chicken.
- Refrigerate approximately 4 hours, massaging and flipping bag once an hour.
- If this is being cooked inside, I prefer places the pieces to be placed onto quick release foil and bake at 350 until a temperature of 180 degrees is reached.
- If weather permits, cook on your grill(my preferred method), flipping after 10 minutes. Remove once temperature reaches 180 degrees.
