Honey Mustard Coleslaw with Apples must be taken to your next barbeque or potluck! That’s exactly what I’m doing with this today! Our community is having our first potluck/bonfire event of the summer at our pavilion tonight. It’s all prepped and ready to go so I’m just chilling on the porch sipping some Strawberry Lemonade, listening to Norah Jones and blogging. The day is beautiful with little humidity. Perfect! Watch out though. A heat wave will be bombarding us at the beginning of next week Serene sounds of the waves will be calling my name. Ocean breezes will massage your cares away. Visualization is a vital concept to master! I’m there….Now, where was I? Let me get the sand out from between my toes.
Quarter and core your head of cabbage. Take a few leaves at a time and slice them lengthwise in 1/4″ strips. Slice the strips in half.
Shred the carrots and onion with a box grater.
Core the Granny Smith apple. Take each slice and cut into thinner slices. Then, cut into small matchsticks.
Toss all of the coleslaw ingredients together so they are distributed evenly.
Sprinkle on the 2 teaspoons of salt over the mix and toss to evenly coat.
Place cabbage mix in a colander over the mixing bowl. After about an hour, you should see the water pulled out by the salt. This helps to ensure the dressing will remain creamy and not thin and watery like some turns out. Be honest; we’ve all seen or even eaten that before.
Remove the mixing bowl and run cool water over the mix as you toss and stir it to remove the salt. I usually do this with my hands for about 2 minutes to ensure the salt’s removal. Do a taste test to check!
Place coleslaw on a clean dish towel and spread out. Roll it up and gently twist both ways. Unroll and blot any remaining water with paper towels. Place into a clean bowl to await its dressing.
Finally, combine the dressing ingredients. Take note of this hint first! Did you know that if you spray a spoon, or any other measuring device for a sticky substance, with a cooking spray (I used an olive oil spray),it just slides on out ? I’ve done this plenty of times, especially when using molasses! Whisk all of the ingredients until smooth.
Pour dressing ingredients over the coleslaw mixture. Stir gently to evenly coat. Now, just chill this Honey Mustard Coleslaw with Apples at least 2 hours in the refrigerator before serving. - 6-7 c. cabbage, quartered, cored, sliced into thin strips
- ⅔ c. shredded carrot
- ¼ c. shredded red onion
- 1 Granny Smith apple, cored, sliced thin, cut into ¼" strips- about 1-1/2 c.
- 2 t. table salt
- Dressing:
- ½ c. mayonnaise
- 3 T. Honey
- 2 T . Dijon
- 2 t. yellow mustard
- 1 T. Apple Cider Vinegar
- 1 pressed garlic clove
- ⅛ t. black pepper
- ½ t. celery seed
- ⅛ t. smoked paprika
- ⅛ t. cayenne
- Walnuts-optional
- Quarter and core a head of cabbage. Taking a few leaves at a time, make ¼" slices lengthwise, then slice in half. Measure out 6-7 cups of loosely packed cabbage strips.
- Shred carrots and onions using a box grater.
- Core and slice apple thinly. Cut slices into matchstick pieces.
- Combine apples with all of the other ingredients.
- Sprinkle salt over the mixture in a bowl and toss to coat.
- Place mix in colander over the bowl to catch the water released. Let it sit for about an hour.
- Remove the bowl from underneath. In the sink, run cool water over cabbage mix, as you toss and stir it, to thoroughly rinse off salt. I usually do this for a couple of minutes. Do a taste test!
- Place contents on a clean dish towel. Roll it up and gently wring out excess water.
- Unroll towel and pat any remaining water by blotting with paper towels. Place in a clean mixing bowl.
- Blend the dressing ingredients with a whisk until smooth.
- Pour dressing over cabbage mix and gently stir to coat throroughly.
- Chill for at least 2 hours before serving.
