I finally purchased another Instant Pot. The first one I gave away to my daughter-in-law since her schedule with teaching and 3 kids is a bit more demanding than mine now that I’ve retired. Anything that saves you time in the kitchen has to be a welcome addition to your appliance collection. Here, I’ve adapted my Pulled Pork BBQ to the Instant Pot. SInce our family size is smaller, I used a 2-pound shoulder roast and cut the sauce ingredients in half. If needed for a larger crowd, you could certainly double this recipe. You will have plenty Instant Pot Pulled Pork BBQ to share! This would be a perfect Sunday family dinner to serve during football season!
The Main Ingredient:
I used a boneless pork shoulder roast. It came with the string netting around it, but I cut that off and portioned it into 4 chunks.
The Rub:
Mix the rub ingredients and then sprinkle it on all sides. Press chunks into the cutting board to “wipe up” all bits of the scattered amazing rub!
Saute:
Preheat your Instant Pot to the SAUTE setting. Add in the olive oil and brown pieces on all sides. This should take about 8-10 minutes.
High Pressure Cook:
Add the chicken broth when finished sauteing meat. Lock the lid in place. Set Instant Pot to PRESSURE COOK cycle on HIGH for 1 hour. Allow steam to NATURALLY RELEASE before opening the lid. This should be less than 20 minutes once the cooking cycle is complete.
The Sauce:
While pork is cooking, prrepare the sauce. You could always use your favorite bottled sauce, but why would you when you could make your own amazing sauce? Brown the diced onions in the oil/butter for about 5 minutes. Whisk in the rest of the ingredients and bring to a low boil. Simmer for about 10 minutes, stirring frequently. Remove from heat until needed.
The Shred:
Remove pork from the pot. Discard any remnants of fat, the shred with a couple of forks. This should take a minimal amount of time as it usually separates quickly!
Time to Eat! :
Check out this Instant Pot Pulled Pork BBQ ! This is the perfect sauce for this incredibly well-seasoned pork. You can mix all of the pork with the sauce, or let individuals mix up their own level of sauce before placing it on the buns. (I used slider buns here.) I’ve even made a wrap using a tortilla. The shredded pork is also great to use to make a shredded pork taco with all the fixings without using sauce. You call how you want to serve it. but do serve it! It will be a family favorite!
Instant Pot Pulled Pork BBQ
Ingredients
- 2 pounds boneless pork shoulder roast
- 1 T extra virgin olive oil
- 1 c chicken broth
Dry Rub
- 1-1/2 t chili powder
- 1/2 t smoked paprika
- 1/2 t sea salt
- 1/4 t cumin
- 1/4 t sage
- 1/4 t oregano
- 1/8 t cayenne pepper
- 1/8 t black pepper
Sauce
- 1 T extra virgin olive oil
- 1 T butter
- 1/2 c finely diced red onion
- 1/4 c water
- 1/4 c chili sauce
- 1/4 c ketchup
- 2 T dark brown sugar
- 2 T apple cider vinegar
- 1 T lemon juice
- 1 T Worcestershire Sauce
- 1 T molasses
- 1 t Kosher salt
- 1 T Dijon mustard
- 1/4 t black pepper
- 1/2 t smoked paprika
Instructions
- If meat is wrapped, cut off string and cut it into 4 sections.
- Mix rub ingredients and sprinkle/rub on all sides.
- Set Instant Pot settings to SAUTE. Once preheated, saute meat in olive oil for about 8-10 minutes until browned on all sides.
- Add chicken broth, then place the lid on and lock in place. Set PRESSURE COOK to HIGH. Set timer for 1 hour. Allow for a NATURAL RELEASE when cycle is completed. While this is working its magic, it would be a good time to prepare the sauce.
BBQ Sauce
- In a small saucepan, brown onions in olive oil/butter, for abaout 5 minutes.
- Whisk in the remainder of the ingredients and bring to a low boil.. SIMMER for about 10 minutes, stirring frequently. Remove from burner.
Finishing Up
- Take out pork; remove and discard visible fat. Shred remaining pork using a couple of forks.
- You could add all the sauce to the shredded pork, or add it individually, if preferred.
