This Sunday is Easter and I have no bunny candy, but as long as I have peanut butter and chocolate to make some Krispy ChocoIate Peanut Butter Treats, I will survive! In all honesty, I usually make these, or a version of these, each year. Adapted from lecremedelacrumb.com’s post for a Reese’s style egg, I incorporated Rice Krispies in the mix for a bit of crunch! They can be made for any special occasion and decorated accordingly. Without heading out to the store during the quarantine, I had just what I needed already on hand! YEAH!
The Mix:
In the microwave, heat the peanut butter and butter for about 1 minute. Whisk together until smooth,
Whisk in the vanilla. To this, stir n the sifted confectioner’s sugar.
Next, add in the Rice Krispies until incorporated throughout peanut butter mixture.
Shaping:
With a medium cookie scoop, create mounds of dough. You can either roll it into a ball, or shape it into an egg shape for an Easter treat! Place shapes onto wax or parchment paper lined rimmed baking pan then put it into the refrigerator to chill for at least 15 minutes. This recipe made 30 shapes with the medium cookie scoop.
The Dipping:
Place your desired choice of chocolate in a small metal bowl over a saucepan with about an inch or so of water which has been brought to a simmer. I chose to use milk chocolate chips to go with peanut butter. What else would I use to get the Reese’s effect? Look how smooth the chocolate is sitting there waiting for a peanut butter ball/egg to take a dip! If it starts thickening up too much, just put it back on the stove for a bit and stir to obtain a more liquid-like consistency.
Dip, or roll, peanut butter shapes into the melted chocolate, If chocolate becomes thick, just place pot back on the stove to help make it become more fluid-like. Place back on parchment paper to allow chocolate harden as it cools. Decorate with your choice of decorative sprinkles while chocolate is still wet.
They are so good! Now I can withstand this quarantine a little while longer…or at least until these are gone….What will be next?
Krispy Chocolate Peanut Butter Treats
Ingredients
- 1 c creamy peanut butter
- 1/4 c (1/2 stick) butter,-unsalted it ok to use
- 1 1/4 c confectioner's sugar, sifted
- 2 t vanilla extract
- 1-1/2 c Rice Krispies cereal
- 2 c milk chocolate chips or melting chocolate wafers
Instructions
- Microwave peanut butter and butter for 1 minute. Whisk until melted butter is incorporated. Then whisk in vanilla.
- Blend in the confectioners sugar until smooth.
- Fold in the Rice Krispies.
- Using a medium cookie scoop, shape into egg shapes, or just roll into balls. Chill your desired shapes for 15 minutes.
- Melt milk chocolate chips or melting chips in a bowl set over simmering water. Stir until no morsels are visible.
- Dip shapes into chocolate to coat all sides. Drip off excess chocolate and smooth off bottom by gliding it across the rim of the bowl. Place on wax or parchment paper. Sprinkle with decorative candies while chocolate is soft. Allow them to harden at room temperature.
- Store in a sealed container and leave on the counter or place in the refrigerator.
