Oatmeal Cookies can be personalized to answer our own craving combinations! These have chopped dried cherries and walnuts, but you could do the old standby of raisins, or maybe you’d like pecans and Craisins. chopped dates and walnuts, maybe even some chocolate chips and coconut. See where I’m going with this? The add-ins are your dream cookie fantasy; you are in control of the outcome, which will ensure a happy ending.
In most baking recipes, they call for room temperature ingredients, but if you want a cookie that doesn’t spread, use cool/cold butter and eggs. Certainly, you don’t want the butter hard, but slight indentations made with your fingers should be possible. Start the mixer out on low, and work up to a higher speed as it begins to lose its butter form. Add the sugars and continue to mix, scraping the sides at least once.
Add the eggs, one at a time until well combined.
Whisk together the dry ingredients, then mix them into the wet mixture.
Now it’s time for your personal creativity or cravings. I love to use the dark, sweet Montmorency cherries when baking. Perhaps I’ll add some white chocolate chips when I make this the next time. Yum! Today, however, it shall be chopped walnuts!
Place cookie scoop-sized mounds 2″ apart on a parchment paper-lined rimmed baking sheet. Bake for 14 minutes.
Remove the Oatmeal Cookies to a cooling rack. Once cool, place in a sealed container. These will disappear quickly, so eat them before they are gone. You can even disguise them by crumbling on top of your yogurt, on top of some fruit like a crumble. No one will ever know! Enjoy!
Oatmeal Cookies
Ingredients
- 1 1/2 c all purpose flour
- 1 t cinnamon
- 1/4 t nutmeg
- 1/4 t ginger
- 1/2 t baking soda
- 1/2 t baking powder
- 1 c butter, slightly softened
- 1 c dark brown sugar
- 1/2 c granulated sugar
- 2 large eggs
- 1 t vanilla
- 1 c chopped walnuts (other options: pecans, any type of chocolate chips)
- 1 c raisins (other options: chopped dark cherries, craisins, dates)
- 3 c old fashioned oats
Instructions
- Whisk dry ingredients together in a separate bowl.
- Cream butter with sugars.
- Beat in eggs and vanilla.
- Add in the dry ingredients.
- Mix in the oatmeal followed by your desired additions.
- Using a medium cookie scoop, place cookies about 2 inches apart on parchment-lined baking sheet.
- Bake in a 350 degree oven for about 14 minutes. Cool slightly then remove them to cooling rack. This makes about 5 dozen cookies. Store in a sealed container or Ziploc bag.
