Strawberry Poppy Seed Dressing is wonderful to make in the midst of strawberry season. Strawberries are so much sweeter and add their own natural sweetener so that it reduces the amount of additional sugar you need to make this perfect! I can’t wait to put this on a salad filled with fresh strawberries, sliced almonds, pecans and maybe some grilled chicken, avocado and feta cheese! The anticipation of tasting all these flavors together is testing my patience! Oh, maybe even some mandarin orange slices?
I am fortunate to live near a wonderful strawberry patch where you can pick your own bucket Four trips I have made thus far and sharing them is my passion whether it be a bucketful, a Ziploc bag full, or a special treat made from them. Today, I’m planning on making some No-Churn Strawberry Ice Cream for our Memorial Day cookout.
Seriously, this is so effortless.( Picking the strawberries doesn’t count. )I have a small food processor which is the perfect size for the quantity prepared here. Blend all the ingredients, except for the poppy seeds and the olive oil, on the puree setting. Scrap the sides down at least once.
Next, add the olive oil one tablespoon at a time, pureeing after each addition. Lastly, add the poppy seeds and blend again, scraping the sides at least once.
Doesn’t this Strawberry Poppy Seed Dressing look incredible? It tastes amazing! You know I couldn’t wait to put this on a salad. A spoon should work for now.
Store dressing in the refrigerator until ready to use. It should last at least a week.
Strawberry Poppy Seed Dressing is a perfect addition to a salad containing fruit, such as strawberries, duh! Here, I also dressed the salad with some leftover grilled chicken, sliced almonds and feta cheese! YUM!
Strawberry Poppy Seed Dressing
Ingredients
- 1 c quartered fresh, ripe strawberries
- 1/3 c mayonnaise
- 3 T white balsamic vinegar
- 1 t Dijon mustard
- 1 t minced garlic
- 1 T turbinado sugar(Sugar in the Raw)
- 1/2 t sea salt
- 1/2 t freshly ground black pepper
- 2 T extra virgin olive oil
- 2 t Poppy seeds
Instructions
- In a food processor add all of the ingredients except for olive oil and poppy seeds. Process until well blended using puree setting, scraping down sides once.
- Add 1 tablespoon of olive oil at a time, blending well after each addition.
- Add the poppy seeds and blend once more.
- Refrigerate until ready to use.
