Blend all ingredients EXCEPT the oils in a small food processor or similar device.
Add in 1/4 cup of the olive oil, then blend.
Add the canola oil, then blend.
Finally, blend in the remaining olive oil and continue to blend until smooth and creamy.
Chill in the refrigerator for at least a couple of hours to allow the flavors to meld.
Keep unused portion refrigerated for up to a week.
