Quick Taco Pasta

Create this in less than 30 minutes for a quick family meal! Don't forget the toppings, if desired!

Ingredients

Taco Seasoning

  • 1 T Chili powder
  • 1/8 t cayenne-(optional)-or substitute 1/4 t. red pepper flakes
  • 1/2 t dried oregano
  • 1 t smoked paprika
  • 1-1/2 t cumin
  • 1/4 t garlic powder
  • 1/4 t onion powder
  • 1/2 t sea salt
  • 1/2 t freshly ground pepper

Meat

  • 1 lb 93/7 lean ground beef or substitute turkey or chicken
  • 1-2 T extra virgin olive oil
  • 1 t minced or pressed garlic
  • taco seasoning (above)
  • 3/4 c water
  • 2 T freshly squeezed lime juice (about 1 lime)
  • 1 T finely diced jalapeno( about 1/2 of jalapeno)
  • 1 T tomato paste

Pasta

  • 1/2 lb small pasta of choice

Cheese

  • 1-1/2 c grated cheddar, fiesta or taco blend cheese

Garnishes

  • diced grape tomatoes
  • diced avocaado
  • chopped cilantro
  • finely diced red onion
  • sour cream

Instructions

Taco Seasoning

  • Stir to combine spices and set aside.

Pasta

  • Cook pasta in slightly salted water til the time indicated for the al-dente stage while meat is cooking. Drain.

Meat

  • Preheat skillet to MED-LOW heat. Add oil and cook meat until it's crumbled and no longer pink.
  • Stir in garlic, seasoning, water, lime juice and tomato paste until well blended.
  • Stir in the finely diced jalapeno to evenly distribute.
  • Stir in the cooked pasta.
  • Turn heat down to a low simmer and distribute cheese evenly over the top. Cover for a few minutes until cheese starts to melt.
  • Garnish as desired.
