Coconut Buttercream Frosting

Ingredients

  • 1 c butter, softened
  • 2 lbs confectioner's sugar
  • 1/2 c milk
  • 1 T coconut extract
  • 2 T cream of coconut
  • 7 oz bag of sweetened coconut

Instructions

  • Whip butter until light and fluffy.
  • Add sugar, 1 cup at a time. The mixture will appear crumbly.
  • Add milk slowly and mix until well incorporated.
  • Add the extract and cream of coconut. Beat on high for a few minutes until desired consistency is met.
  • Once cake is frosted, gently press coconut flakes into sides and top of cake.
