Deviled Eggs

The steaming process makes perfectly peeled eggs! The filling has the right amount of sweet-tangy flavor. Smoked paprika adds a perfect contrast of flavors!

Ingredients

  • 6 large eggs
  • 2 T mayonnaise
  • 2 t yellow mustard
  • 2 t sweet pickle relish
  • pinch salt
  • pinch freshly ground black pepper

Instructions

  • In a saucepan, bring 1" of water to a boil on HIGH. Add the steamer basket and place in the 6 eggs..
  • Cover and reduce heat to medium. Set timer for 15 minutes.
  • Remove from heat and run cold water over eggs until they are comfortable to handle.
  • Roll eggs gently on the counter surface to crack center of shells. Peel and rinse off.
  • Slice eggs in half and remove cooked egg yolks. Crumble them with a fork and place in a small bowl.
  • Add in the remaining ingredients and blend well.
  • In a sandwich size ziploc bag, place the filling mixture. Clip off a small corner of the bag and squeeze filling equally into the cooked eggs.
  • Sprinkle with Smoky Paprika, if desired.
  • Cover and chill.
