The critics agree, these Apple Pie Pancakes are a winner! The critics? The “Littles” otherwise known as the grandchildren. That name isn’t going to last for long since the oldest, Vanze, is about as tall as me ! “Gigi,” he said. “Are you going to post these?” Emma chimed in and said, “I’d give these a 10/10 !” Their little brother, Weston, just sat there with a mouthful giving a big thumbs up. Well, I guess I’ll need to post this on their insistence.
I started with one of my favorite pancake recipes, Butter Rich Pancakes. The vanilla was dropped because, to be honest, I was out of it. I added cinnamon and nutmeg to spice it up a bit. The batter should rest for 10-15 minutes. While you are waiting for this time to pass, wash and slice apples about 1/4″ thick. I cored out the center using a small shape cutter from my Linzer cookie tool kit. I chose a flower since it’s spring!
Place one large scoop of batter on your prepared. griddle. I usually wipe it down with a thin coat of coconut oil using a paper towel..Place one slice on top of batter and gently press it down as shown.
Flip over when batter begins to bubble.
Remove when bottom appears golden and serve them up! They will definitely ask for these Apple Pie Pancakes again! Could I serve these with a small scoop of vanilla ice cream? Oh, yes! Let’s just keep that a secret between us for now,

Serves: 16-20
- 1¼ c. all purpose flour
- ¼ c. turbinado sugar(Sugar in the Raw)/ or granulated sugar
- 2 t. baking powder
- 1 t. baking soda
- ½ t. cinnamon
- ¼ t. nutmeg
- 1¼ c. buttermilk
- 2 large eggs
- ¼ c. melted butter( ½ stick)
- 2 apples sliced horizontally, center cored out
- Whisk together the dry ingredients.
- Whisk together buttermilk and eggs
- Make a well in the center of the dry ingredients and whisk in the buttermilk and egg mixture.
- Blend in the melted butter and allow batter to rest for about 10 minutes.
- Wash and slice apples about ¼" thick. Using a small cutter, core out the center. If you don't have those cute small cutters, use an apple correr first, then slice. I leave the peel on the apple.
- Preheat griddle to 325-350 degrees, Wipe s thin layer of oil onto the griddle with a folded paper towel just before scooping the batter out to cook.
- Using a large scoop, place batter on griddle. Press an apple slice onto the batter and press down lightly.
- Turn once batter begins to bubble.
- Continue to cook until underside is golden. If center(cored part) puffs up too much while cooking, press it down gently.
