Lunch prep anyone? Broccoli Salad is a refreshing alternative to a packed lunch. Crunchy, flavorful and amazingly delightful in each bite! Serve this as a side for a cookout or a casual family Meatless Monday meal! The combination of flavors is perfect! Just a touch of orange zest brightens the flavor and entices your taste buds into wanting more. Eat more fruit and vegetables? Why not !
The Prep:
Shred the carrots, dice the onion and cut the broccoli into small florets.
Core and slice an apple. My favorite is Honeycrisp but you could use Granny Smith as well. Balancing the color is important to me. Keep the skin on. Slice each slice in half lengthwise, then dice as shown.
In the bowl containing the broccoli, add the carrots, onions, apple, toasted pecans and craisins. Toss to equally distribute the ingredients.
In a small bowl, combine the mayo, light sour cream, orange juice, orange zest, sugar, salt, pepper and chia seeds, if using.
Pour it over the contents of the bowl and gently combine to coat all ingredients. Can you see the orange zest? Wait until you taste its impact on this salad! Yum!
This Broccoli Salad is perfect for a quick lunch that will provide sustenance for the afternoon grind, making it easier to get to the end of the day with a feeling of satisfaction.
Broccoli Salad
Ingredients
- 2 c broccoli cut into small florets
- 1 c carrots, shredded
- 1/4 c red onion, finely diced
- 1 medium Honeycrisp apple, cored, sliced, halved and diced
- 1/2 c chopped pecans, toasted
- 1/2 c Craisins
- 1 t orange zest
- 2 T orange juice
- 1/2 c mayonnaise
- 1/2 c light sour cream
- 1 T sugar
- 1/4 t sea salt
- 1/2 t freshly ground black pepper
- 1 1/2 t chia seeds(optional)
Instructions
- Cut, dice, shred all vegetables.
- Lightly toast chopped pecans until fragrant. WATCH!
- Wash, core and slice apple; do not peel. Slice each apple slice in half lengthwise. Then cut through to dice.
- Place florets, carrots, apples, onion, pecans and craisins in a medium-sized bowl and toss to evenly distribute ingredients.
Orange Dressing
- Combine all of the dressing ingredients in a small bowl. Pour over the contents of the medium bowl and gently stir to coat them well.
- Place salad in a container, cover and chill for a couple hours before serving.
