Broccoli Salad

Orange zest and orange juice add a bit of zing to this delightful combination of flavors!

Ingredients

  • 2 c broccoli cut into small florets
  • 1 c carrots, shredded
  • 1/4 c red onion, finely diced
  • 1 medium Honeycrisp apple, cored, sliced, halved and diced
  • 1/2 c chopped pecans, toasted
  • 1/2 c Craisins
  • 1 t orange zest
  • 2 T orange juice
  • 1/2 c mayonnaise
  • 1/2 c light sour cream
  • 1 T sugar
  • 1/4 t sea salt
  • 1/2 t freshly ground black pepper
  • 1 1/2 t chia seeds(optional)

Instructions

  • Cut, dice, shred all vegetables.
  • Lightly toast chopped pecans until fragrant. WATCH!
  • Wash, core and slice apple; do not peel. Slice each apple slice in half lengthwise. Then cut through to dice.
  • Place florets, carrots, apples, onion, pecans and craisins in a medium-sized bowl and toss to evenly distribute ingredients.

Orange Dressing

  • Combine all of the dressing ingredients in a small bowl. Pour over the contents of the medium bowl and gently stir to coat them well.
  • Place salad in a container, cover and chill for a couple hours before serving.
