Butter Rich Sausage Pancakes taste just like those pancakes on a stick with the sausage hidden in the middle! If you want to go back in time and taste that childhood favorite, here is your chance! Pancakes, sausage and syrup are the perfect blend of flavors to welcome any grump to a brand new day with a smile shining as the sun rises from its sleep. I chose to use my Butter Rich Pancakes as a base for this addition. You could even use my Greek Yogurt Pancakes recipe. You choose!
Whisk together the dry ingredients. Mix the buttermilk, vanilla and eggs together. Then, add them to the dry mixture with the cooled, melted butter.
My choice is to use sage sausage which is my favorite. However, use whatever is your favorite breakfast sausage. This was pre-cooked the night before so I could add it in while I was half awake waiting for the crew to come downstairs to feast.
Allow the batter to rest for about 15 minutes.
Preheat the griddle to 320-350 degrees. You are aware of your griddles tendencies. Prepare the griddle by wiping coconut oil on surface with a folded paper towel just before placing on batter, if needed. Be careful not to touch it! I use a large scoop to create the pancakes. Turn once bubbles begin to appear towards the middle.
Serve them up!

Butter Rich Sausage Pancakes
Ingredients
- 1/4 c butter, melted and cooled
- 1 1/4 c flour
- 1/4 c sugar
- 2 t baking powder
- 1 t baking soda
- 2 large eggs, beaten
- 1 1/4 c buttermilk
- 1 t vanillla
- 1/4 lb cooked, crumbled sage sausage add more if desired
Instructions
- Cook and crumble the sausage. Allow it to cool. If you like more sausage flavor, cook more! This could be done ahead of time and stored in fridge awaiting this preparation.
- Melt and cool the butter while you prepare the other ingredients.
- Whisk together the dry ingredients.
- Blend together the buttermilk, vanilla and beaten eggs.
- Make a well in the center of the dry ingredients and pour the wet ingredients and the cooled butter into it. Blend together then stir in the sausage crumbles. Allow the batter to rest about 15 minutes.
- Preheat griddle to 320-350 degrees. If needed, prepare griddle by wiping coconut oil saturated on a folded paper towel. Using a large scoop, or a 1/4 cup size meaasuring cup, drop batter on griddle. Flip over when bubbles appear towards the middle and cook the other side.
