Butter Rich Sausage Pancakes

Ingredients

Prep Ahead:

  • 1/4 c butter, melted and cooled
  • 1/4 lb cooked, crumbled sage sausage add more if desired

Dry Ingredients:

  • 1 1/4 c flour
  • 1/4 c sugar
  • 2 t baking powder
  • 1 t baking soda

Wet Ingredients:

  • 2 large eggs, beaten
  • 1 1/4 c buttermilk
  • 1 t vanillla

Instructions

  • Cook and crumble the sausage. Allow it to cool.  If you like more sausage flavor, cook more! This could be done ahead of time and stored in fridge awaiting this preparation.
  • Melt and cool the butter while you prepare the other ingredients.
  • Whisk together the dry ingredients.
  • Blend together the buttermilk, vanilla and beaten eggs.
  • Make a well in the center of the dry ingredients and pour the wet ingredients and the cooled butter into it. Blend together then stir in the sausage crumbles. Allow the batter to rest about 15 minutes.
  • Preheat griddle to 325-350 degrees. If needed, prepare griddle by wiping it with an oil saturated on a folded paper towel, unless it's npn-stick.  Using a large scoop, or a 1/4 cup size meaasuring cup, drop batter on griddle. Flip over when bubbles appear towards the middle and cook the other side.
