You can’t make Mardi Gras Jambalaya without some Cajun Seasoning. Unfortunately, I discovered in the midst of prepping that I didn’t have enough. So, the smart and reasonable thing to do is make your own rather than run to the store, wasting time and gas.. Certainly, I must have the ingredients to make this in my spice cupboard. Ah-ha!
Just add the Kosher salt, garlic powder, smoked paprika, cayenne, dried thyme, dried oregano, freshly ground black pepper and red pepper flakes to a small food processor or similar device, and pulse to blend.
I have a coffee grinder designated for just herbs when I harvest them, so this is what I used for this seasoning. It was the perfect size since the amount was small; there’s no need for even a small food processor!
This Cajun Seasoning can be used to make some Cajun Wings for a football watching party, or maybe some Oven Baked Cajun Fries. Don’t forget the Mardi Gras Jambalaya ! Funnel this into a spice jar to store for use. I usually save old spice jars to reuse for my herbs and spice blends and relabel it.
