Garlic Thyme Smashed Cauliflower provides you a great substitute for mashed potatoes. When there is a new cooking trend, you must try it out for yourself and test it out on your family! If you are on a low-carb diet, this will satisfy those longings. Either way, your can flavor these any way you prefer to make them your own. Recently, I placed my Mississippi Pot Roast on top of a pile of these and it was quite satisfying.
From a large head of cauliflower, break/cut off the florets.
Chop the florets into smaller bits. This will reduce cooking time and make it easier for you to “smash”. Using a food processor would definitely take less time, but mine needs to be replaced so old school it is!
Place the chopped cauliflower in a saucepan along with a bundle of thyme and 3 cloves of garlic, sliced.
Cover the cauliflower with water. Bring it to a boil and reduce heat. Continue to cook for about 10-12 minutes. Cauliflower should be cooked to a point that it’s soft enough to easily mash.
Drain in a colander and place back in the pot with bundle of thyme and garlic. “Stir” thyme bundle into cooked cauliflower to release some of the leaves into the mixture, then toss what’s left of the bundle. cut up 2 tablespoons of butter, or replace it with a bit of olive oil.
Sprinkle a little salt and grind some fresh black pepper over the top.
Use an immersion blender in the pot or place contents in a food processor. Blend/process until smooth. Consistency should be similar to that of mashed potatoes. Adjust seasoning to your liking and serve them warm.

Serves: 6 servings
- 1 large head of cauliflower
- 3 cloves of garlic, sliced
- sprigs of thyme
- 2 T. butter/EVOO
- Kosher salt
- pepper, freshly ground
- Separate cauliflower into florets.
- Chop into smaller pieces.
- In a medium pot, cover chopped cauliflower with cold water.
- Bring to a boil and reduce heat.
- Cook for about 10 minutes. Fork-test to make sure it's soft enough to mash.
- Drain. Strip leaves from the sprigs of thyme.
- Add butter and stripped thyme leaves. Place in a food processor or use an immersion blender to create your desired consistency.
- Season to your liking with salt and pepper.
