No-Churn S’mores Ice Cream tastes incredible! S’mores have a sentimental value. My middle son, Nick, was really obsessed with two sweet things; Reese’s pieces and S’mores. We recently celebrated what would have been his 31st birthday, so we ate the best of both worlds; Chocolate Peanut Butter Texas Sheet Cake and this year’s addition, No-Churn S’more’s Ice Cream ! Chocolate-infused desserts are always the best! Don’t wait to go camping to enjoy your next infusion of s’mores!
This process is incredibly easy! Whip the heavy cream and cocoa until stiff peaks form. Continue whipping as you add the sweetened- condensed milk and vanilla. The amount of cocoa adds the perfect amount of chocolate flavor similar to that of soft-serve ice cream.
In a foil-lined pan, layer the crushed graham crackers, milk chocolate chips and marshmallows.
Bake until marshmallows are toasted lightly golden brown. as shown. Cool slightly so you can crumble them with your hands.
Layer half of the s’more mixture on the bottom of a foil-lined square pan.
Spread half of the ice cream mixture over the top of the s’mores along with other half of the s’mores..
Smooth the rest of the ice cream over the second layer of s’mores. Cover it with plastic wrap and place in the freezer. In a couple of hours, remove plastic and stir gently from the bottom up to help evenly distribute the s’more mixture throughout the ice cream. Cover and place back in the freezer for a few more hours. If you prepare this earlier in the day, you should be able to eat it in the evening after your dinner, but save room for this because you mouth will love you!

Serves: 8-12 servings
- 2 c.to continue heavy whipping cream
- ¼ c. cocoa
- 1-14 oz, can sweetened condensed milk
- 1 T. vanilla
- 1 sleeved package from box of graham crackers
- 1 c. milk chocolate chips
- 1 c. mini-marshmallows
- Whip cream and cocoa until peaks form and cocoa is well blended.
- Add sweetened condensed milk with vanilla and continue to blend in, scraping sides down halfway through the process.
- On a foil-lined pan crush graham crackers. Sprinkle with milk chocolate chips and top with mini-marshmallows.
- Place in (toaster(oven just until marshmallows begin to look toasty brown. Remove and let it cool briefly.
- Line a square pan with foil. Crumble half of s'more mixture on the bottom ofthe pan.
- Layer half of the ice cream mixture on top with the last half of the s'more mixture,
- Top with the remainder of the ice cream. Cover with plastic wrap and insert into the freezer.
- In about and hour, take ice cream out and stir mixture gently to combline s'mores throughout.
- Place back into freezer to continue to further solidify.
