Fresh strawberries are winding down in the fields but these Strawberry Lemon Blondies are a great way to bring the u-pick season to an end and move on to blueberries which open for picking today! Yeah! I’m not sure that blondies require an icing, but I just had to go there using more fresh strawberry puree.
Ingredients:
Start with melting the butter and measuring out the ingredients and have them ready to add in this process. I mix this by hand using a whisk and a spatula so that will help with the clean up while the blondies are baking.
The Mix Up:
The lemon zest is rubbed into the granulated sugar before adding it to the melted butter along with he brown sugar.The aroma infused into the sugar from the lemon zest is so refeshing and it will help distribute the lemon flavor throughout the batter.
Whisk in the eggs followed by the strawberry puree and extracts.
Whisk in the dry ingredients gradually, then fold in the drained chopped strawberries with the white chocolate chips.
Spread batter into a parchment paper-lined 13″ x 9″ x 2″ metal pan. Be aware that if you use a glass pan, the baking time may be a bit longer because of how differently glass conducts heat.
The Bake:
After about 35 minutes at 350 degrees, check to see that a toothpick entered in center comes out clean. My husband followed the smell wafting upstairs to his office to plead for some as it came out of the oven. Disappointment was evident on his face when I told him he had to wait for it to cool.
The Taste Test:
After putting on the icing(optional), we sliced these Strawberry Lemon Blondies to test whether we succeeded. Speechless emotions of satisfaction were evident in our facial expressions. I shared some with my neighbor on her porch to celebrate her fully vaccinated status as of today. She was delighted to be a taste-tester. She responded that its density reminded her of an old-fashioned cake and found the blend of the ingredients to be perfect! Hopefully you will have the same result.
Strawberry Lemon Blondies
Ingredients
- 1 c butter, melted
- 1 c light brown sugar
- 3/4 c granulated sugar
- 2 t lemon zest
- 3 large eggs
- 1 t lemon extract
- 1 t vanilla extract
- 2 T strawberry puree
- 2-1/4 c flour
- 1/2 t baking powder
- 1/2 t salt
- 1 c white chocolate chips
- 1 c finely chopped strawberries, drained (about 3/4 cup)
Icing
- 1-1/2 c confectioner's sugar
- 1 T fresh lemon juice
- 2 T heavy cream
- 1 T strawberry puree
- 1 t lemon zest
Instructions
Blondies
- Melt buttter in microwave.
- Rub lemon zest into the granulated sugar.
- Add both sugars to melted butter and whisk until combined.
- Whisk in the 3 large eggs followed by the extracts and puree.
- Whisk together the dry ingredients and blend in gradually.
- Fold in the finely chopped and drained strawberries along with the white chocolate chips.
- Pour into a 13" x 9" x 2" pan lined with parchment paper amd spread out evenly with a spatula.
- Bake for 35 minutes at 350°F or until toothpick inserted in center comes out clean.
- Cool in pan for about 15 minutes onto a cooling rack; then slide out of pan slowly pulling on the parchment paper.
Strawberry Icing (optional)
- Blend all of the ingredients together. Spread onto cooled blondies.
