Strawberry Lemon Blondies

Strawberry season is almost over. Let's celebrate with this scrumptious treat!

Ingredients

  • 1 c butter, melted
  • 1 c light brown sugar
  • 3/4 c granulated sugar
  • 2 t lemon zest
  • 3 large eggs
  • 1 t lemon extract
  • 1 t vanilla extract
  • 2 T strawberry puree
  • 2-1/4 c flour
  • 1/2 t baking powder
  • 1/2 t salt
  • 1 c white chocolate chips
  • 1 c finely chopped strawberries, drained (about 3/4 cup)

Icing

  • 1-1/2 c confectioner's sugar
  • 1 T fresh lemon juice
  • 2 T heavy cream
  • 1 T strawberry puree
  • 1 t lemon zest

Instructions

Blondies

  • Melt buttter in microwave.
  • Rub lemon zest into the granulated sugar.
  • Add both sugars to melted butter and whisk until combined.
  • Whisk in the 3 large eggs followed by the extracts and puree.
  • Whisk together the dry ingredients and blend in gradually.
  • Fold in the finely chopped and drained strawberries along with the white chocolate chips.
  • Pour into a 13" x 9" x 2" pan lined with parchment paper amd spread out evenly with a spatula.
  • Bake for 35 minutes at 350°F or until toothpick inserted in center comes out clean.
  • Cool in pan for about 15 minutes onto a cooling rack; then slide out of pan slowly pulling on the parchment paper.

Strawberry Icing (optional)

  • Blend all of the ingredients together. Spread onto cooled blondies.
