Twice-Baked Potatoes are a great accompaniment to any meaty main dish, or just by themselves. I hadn’t made them in a long time, but it was delightful to taste them once again! These are a comfort food all to themselves. The microwave assists in its preparation so you can have them sooner rather than later. In fact, I believe this recipe came from a cookbook which came with my very first microwave.
Scrub and pierce potatoes with a fork several times. Place potatoes in the microwave for 5 minutes at full power, Flip the potatoes over and repeat for 5 more minutes. They should be tender when pricked with a fork and soft to the touch. Remove from the microwave and cool to touch. Slice off the tops
The original recipe calls 1/2 cup each of butter and sour cream. However, that can’t be too great on the calorie and fat count. Adjust consistency to your liking and health concerns. Make up for that with that some healthier additions to boost the flavor if you reduce the original ingredients. Let me know what additions/toppings you use!
Place the cut up butter in a mixing bowl. Using a melon scoop, remove the warm contents from all parts of the baked potatoes and place on top of butter to melt it.
If the butter hasn’t completely melted ,microwave briefly. Beat in sour cream with salt and pepper together until smooth. Fill the potato shells with the mixture.
Top with cheese of your choice.
Microwave for 4 minutes until cheese is melted.
Enjoy the filling in all its splendor. Add in some healthy nuggets of flavor like some veggies to help you justify eating this. Don’t forget to devour the skin with all those nutrients!

Serves: 4 servings
- 4 baked Russet potatoes
- ¼ c. - ½ c. butter~original recipe used ½ c. ~ alter for desired taste
- ¼ c. - ½ c. light sour cream~original recipe used ½ c. regular sour cream ~ alter for desired taste
- salt and pepper
- shredded cheese
- other healthy toppings of your choice
- Microwave/bake until potatoes are tender when pricked with a fork. Allow to cool slightly.
- Cut up butter and place in a mixing bowl.
- Slice off the tops and scoop out the potatoes and place in bowl with butter,
- Add sour cream, salt and pepper to potato mixture.
- Beat until creamy.
- Spoon into potato shells.
- Sprinkle with cheese.
- Microwave 4 minutes.
